Healthy peanut triangles

    g
    butter
  • 200
    g
    brown sugar
  • 1
    large egg
  • 5
    ml
    vanilla essence
  • 200
    g
    self-raising flour
  • 90
    g
    oats
  • 250
    ml
    rice crispies
  • 150
    g
    salted peanuts
 

Method

20 minutes
 
Cream butter and sugar until light.
Add egg and vanilla essence and beat well.
Sift in flour and mix.
Add the remaining ingredients and mix well.
Flatten into a 30 x 40 cm greased baking tray. Bake in a preheated oven at 180 ºC until golden brown and crisp, about 20 minutes.
Allow to cool slightly, then slice into triangles.
