Healthy oat bread

  • 150ml (3/5c) lower GI oats
  • 250ml (1c) oat bran
  • 375ml (1 1/2c) flour, sifted before measuring
  • 250ml (1c) whole-wheat ProNutro
  • 5ml (1t) salt
  • 20ml (4t) baking powder
  • 20ml (4t) sugar
  • 1 egg
  • 200ml (4/5c) low-fat milk
  • 20ml (4t) water


In a large bowl, mix the oats, oat bran, flour, ProNutro, salt, baking powder and sugar.Beat egg, milk and water together for not longer than 1 minute.Combine the egg mixture with the flour mixture and stir until dry ingredients are just moistened.Work the dough into a soft ball with your hands, using more oats to prevent it from sticking to you hands. Cover the ball of dough with oats and form into a round loaf shape. Place on a baking sheet and bake for about 1 hour at 180 degrees Celsius.
