Ingredients (12)

Salsa:
1.00 papaya — diced
8.00 strawberries — diced
5.00 spring onions — roughly chopped
20.00 ml fresh coriander — roughly chopped
1.00 fresh chillies — deseeded and finely chopped
10.00 ml fresh chillies — 573
15.00 ml lemon juice — fresh
0.00 sea salt and freshly ground black pepper
Fish parcels:
4.00 pitta breads — whole wheat
200.00 g mackerel — smoked, flaked
1.00 avocado — peeled and sliced
60.00 ml sour cream — or plain yoghurt

Method:

Salsa:

Mix the salsa ingredients and set aside.
Fish parcels:
Heat the pittas in a hot dry pan until brown and puffed (a griddle pan produces
an interesting charred effect). Cut open the pittas and fill with the mackerel and avocado slices. Add a little salsa and a spoonful of sour cream or yoghurt.
