Healthy quinoa with stir-fried vegetables

Ingredients (12)

100 ml quinoa — rinsed
30 ml sunflower oil
1 red onion — halved, sliced
2 cloves garlic — cloves, crushed
1 pepper — medium, sweet, chopped
2-4 courgettes — chopped
sugar snap peas — handful
250 ml cabbage — red, shredded
50 ml cashew nuts — chopped
15 ml honey
45 ml soy sauce — light
15 ml chia seeds

Method:

Cook the quinoa according to the instructions on the packet.

Heat the oil in a wok or large frying pan. Add the onion and garlic and fry for 30 seconds. Add the peppers, courgettes and snow peas and fry for about one minute. Add the cabbage, nuts, honey and soy sauce and fry until the cabbage is wilted, but still crunchy. Serve on a bed of quinoa and sprinkle with chia seeds.
