    eggs, whisked

    stoned dates, finely chopped
 

Method

45-60 min
 
Preheat the oven to 180 ºC and spray two oven pans with non-stick spray. Slowly melt the butter and sugar. Sift the flour, baking powder and salt together and add the bran flakes, bran, seeds and raisins. Whisk the buttermilk and eggs together and mix into the butter mixture along with the dates. Add to the dry ingredients and mix well. Turn into the prepared pans or make balls and arrange in the oven pans. Bake for about 45-60 minutes or until done. Turn out onto wire racks to cool. Break into smaller pieces and dry out at 100 ºC. Store in airtight containers. Makes about 50 large pieces.
