    extra-large egg, whisked

    white chocolate (optional)
 

Method

Preheat oven to 180 ºC (350 ºF). Spray a muffin tin with 12 hollows with non-stick spray or grease with margarine. Combine all the dry ingredients in a large mixing bowl. Blend the butter and honey well and add to the dry ingredients. Mix lightly. Mix the egg and milk and add to the flour mixture. Mix lightly, taking care not to overmix. Fill each hollow of the muffin tin three quarters full with the batter and bake for 20 minutes or until a skewer inserted comes out clean. Cool in the tin for a few minutes before turning out onto a wire rack to cool completely. Melt the chocolate and drizzle over the muffins if desired. Makes about 15 muffins.
