Method

Preheat the oven to 180 ºC and spray 12 large muffin cups or the hollows of large muffin tins with non-stick spray. Beat the oil, eggs, sugar, vanilla essence, milk, yoghurt and salt together and dissolve the bicarbonate of soda in a little of the mixture. Add to the rest of the mixture. Combine the dry ingredients and add the yoghurt mixture. Mix lightly until just blended. Fill the prepared muffin cups three-quarters of the way and bake for 20-25 minutes until done. Leave for about 5 minutes in the muffin cups to cool before carefully turning out. Serve with butter, cheese and fruit preserve. Makes 10-12 large muffins.
