Ingredients (9)

500.00 ml rice — basmati
250.00 ml water
400.00 g coconut milk
45.00 ml oil
2.00 fresh chillies — chopped
10.00 ml cinnamon — ground
10.00 ml cumin — ground
500.00 g stir-fry vegetables
410.00 g pineapple — tinned pieces, drained

Method:

Rinse the rice under cold water. Place in a saucepan with the water and coconut milk. Bring to the boil, then reduce to simmer for 12 minutes. Drain and set aside.
In a large frying pan or wok, heat oil. Add chillies and spices and stir-fry for 30 seconds. Add vegetables and stir-fry over high heat for 5 minutes. Add the rice and pineapple pieces and stir to mix well. Serve as a vegetarian meal or as an accompaniment to chicken or meat. Serves 4-6.
