Hawaiian vegetable and coconut rice

    basmati rice
  • 250

    water
  • 400

    coconut milk
  • 45

    oil

    chillies, chopped
  • 10

    ground cinnamon

    ground cumin
  • 500

    packet stir-fry vegetables
  • 410
    g
    pineapple pieces, drained
 

Method

Rinse the rice under cold water. Place in a saucepan with the water and coconut milk. Bring to the boil, then reduce to simmer for 12 minutes. Drain and set aside. In a large frying pan or wok, heat oil. Add chillies and spices and stir-fry for 30 seconds. Add vegetables and stir-fry over high heat for 5 minutes. Add the rice and pineapple pieces and stir to mix well. Serve as a vegetarian meal or as an accompaniment to chicken or meat. Serves 4-6.
