Hawaiian toast

    butter
  • 1
    onion, finely chopped
  • 1
    green pepper, seeded and diced
  • 4
    ripe tomatoes, peeled and finely chopped
  • salt and pepper to taste
  • 100

    cream
  • 1
    small pineapple, peeled and diced
  • 2
    vienna sausages or slices of ham, cut into pieces
  • 100

    Cheddar cheese, grated
  • 2
    eggs, whisked
  • salt and pepper to taste
  • parsley for sprinkling
  • 4
    slices toast
 

Method

 
Melt the butter in a pan and sauté the onion and green pepper until soft. Add the tomatoes and season with salt and pepper to taste. Add the cream and simmer to form a thick sauce. Add the pineapple and sausages or ham and simmer for another 5 minutes, Add the cheese and eggs and mix. Heat until the cheese has melted and the egg is cooked. Spoon on top of the toast and sprinkle with parsley. Serve immediately. Serves 4.
