Ingredients (15)

250.00 g rice — brown, cooked
3.00 ml braai spice
1.00 celery stalks — chopped
1.00 red pepper — seeded and diced
1.00 green pepper — deseeded and diced
100.00 ml sweetcorn — on the cob
30.00 ml raisins — seedless
1.00 onion — small, chopped
25.00 ml fresh parsley — chopped
2.00 ml cayenne pepper
1.00 ml freshly ground black pepper
3.00 ml salt
DRESSING
50.00 ml honey
5.00 ml mustard — medium
40.00 ml lemon juice

Method:

Mix all the salad ingredients.
Blend the salad dressing ingredients and pour over the salad. Mix gently and transfer to a salad bowl. Chill until just before serving and serve with the pork pot roast and mango sauce.
