Hamburgers on griddlecakes

    Griddlecakes: white bread flour

    instant yeast
  • 10

    oil

    lukewarm water

    Hamburger patties: slices bread, crusts removed
  • 150
    ml
    milk
  • 1
    kg
    lean beef mince
  • 2
    eggs, lightly whisked
  • 1
    onion, finely chopped
  • 7

    freshly ground black pepper
  • 25

    chopped fresh coriander
  • 5
    ml
    ground cumin
  • 1
    handful rocket leaves
  • 2
    large ripe tomatoes, sliced

    red onion, sliced
 

Method

Mix the dry ingredients. Mix the oil and lukewarm water and gradually add to the dry ingredients to form a soft, pliable dough. Add more water or flour as needed. Knead well for 10 minutes or until the dough is smooth and elastic. Cover and leave to rise for 45-60 minutes or until double in volume. Knock down the dough and on a floured surface press the dough into a 3 cm thick round. Using a glass or mug cut out discs. Arrange the discs on a greased grid. Braai over medium-hot coals for 8-12 minutes on each side or until done.

Hamburger patties
Soak the bread in the milk for 10 minutes and mash with a fork. Lightly mix the soaked bread and the remaining ingredients until just blended. Wet your hands and shape the meat mixture into 8 uniform patties. Braai over medium-hot coals for 5-10 minutes on each side or until cooked to your liking.

To serve
Halve the griddlecakes and fill each with rocket leaves, a hamburger patty, tomato slices and onions rings.
