Ham and rice potluck

    green peppers, chopped
  • 2
    onions, sliced
  • 2
    cloves garlic, finely chopped
  • 30

    oil
  • 50
    ml
    soy sauce
  • 10
    ml
    soft brown sugar
  • 7
    ml
    ground coriander
  • 10
    ml
    anchovy sauce or anchovy paste (optional)
  • 375
    g
    smoked ham slices, sliced into strips
  • 1
    Litres
    cooked rice
  • 200
    g
    prawns, drained
 

Method

 
Sauté the green pepper, onion and garlic in hot oil until soft. Add the soy sauce, brown sugar, coriander and anchovy sauce and mix well. Add the strips of ham and fry a little. Reduce the heat and add the rice. Mix well. Finally add the prawns and heat through. Transfer to a serving platter and garnish with strips of omelette and cucumber slices. Serves 6.
