Ingredients (11)

2.00 green pepper — deseeded and chopped
2.00 onion — sliced
2.00 garlic — cloves, finely chopped
30.00 ml oil
50.00 ml soy sauce
10.00 ml brown sugar — soft
7.00 ml coriander — ground
10.00 ml anchovy paste
375.00 g ham — smoked, strips
1.00 Litres rice — cooked
200.00 g prawns — drained

Method:

Sauté the green pepper, onion and garlic in hot oil until soft. Add the soy sauce, brown sugar, coriander and anchovy sauce and mix well. Add the strips of ham and fry a little. Reduce the heat and add the rice. Mix well. Finally add the prawns and heat through. Transfer to a serving platter and garnish with strips of omelette and cucumber slices.
Serves 6.
