Ham and celeriac salad

    g
    celeriac
  • 1
    lemon (juice only)
  • 1
    green apple
  • 30
    ml
    strong seed mustard
  • 250
    ml
    mayonnaise
  • 1
    celery heart, sliced
  • 200
    g
    sliced ham
 

Method

Peel and cut celeriac into julienne strips. Blanch with half the lemon juice until just limp. Drain. Grate apple and mix with celeriac and remaining lemon juice immediately. Add mustard to mayonnaise and add sliced celery and apple mixture. Season. Lay ham on plates and top with celeriac salad. Serves 6.
