Ham and Emmentaler pizza

    gammon, cubed

    Emmentaler cheese, cubed

    fresh basil, chopped
  • TOMATO BASE

    medium onion

    olive oil
  • 3
    large ripe tomatoes
  • 75
    ml
    tomato purée
  • 5
    ml
    sugar
  • salt and black pepper
  • 1
    bay leaf
  • 1
    fresh thyme sprig
 

Method

 
To prepare tomato base, chop and slowly cook the onion in oil until transparent. Skin, seed and chop tomatoes, add together with purée, seasonings and herbs. Simmer gently without lid until thick and reduced, then push through a metal sieve or purée in a food processor. Spread the mixture thickly onto each pita base, sprinkle generously with cubed gammon, cheese and herbs. Brown in a hot oven (200 ºC) for 6 to 8 minutes.
