Ingredients (7)

1.00 Litres ice cream — vanilla
200.00 g halva
500.00 g mixed berries — frozen
125.00 ml castor sugar
5.00 ml vanilla — essence
1.00 bunch fresh mint — to garnish
20.00 ml fruit — seasonal

Method:

1. Soften the ice cream. Break up the halva, then pulse in a food processor
until coarsely chopped and fold into the ice cream. Line a loaf tin or individual
ramekins with clingwrap and spoon in the ice cream. Freeze for up to six hours.

2. Place the berries, castor sugar and 30ml water in a saucepan and cook until the berries are soft. Blend in a food processor until smooth. Add the vanilla essence or a tot of strawberry liqueur, if you are using it. Set aside to cool.

3. Remove the ice cream from the tin and slice. Place onto serving plates and spoon over the berry coulis. Serve topped with a mint leaf, and accompanied by seasonal fruit.
