Haloumi and cashew-nut salad

    cucumber, halved and finely sliced

    packet
    mixed salad leaves
  • 1
    yellow pepper, sliced
  • 1
    red pepper, sliced
  • 1
    small packet
    rocket leaves
  • 125
    ml
    black olives
  • 200
    g
    haloumi cheese
  • 125
    ml
    cherry tomatoes
 

Method

1. Layer the salad leaves, rocket, peppers, cucumber, tomatoes and olives in a salad bowl and refrigerate.

2. Just before serving, place the cheese under a hot grill until golden brown on both sides. Allow to cool slightly and cut into cubes. Sprinkle over the salad ingredients along with the cashew nuts. Serve drizzled with balsamic vinegar and olive oil.
