Hake with wine and cheese sauce

    hake fillets, cut into portions
  • 60
    ml
    butter
  • 0
    half an onion, grated
  • 250
    g
    mushrooms, finely chopped
  • 250
    ml
    vegetable stock or water
  • 125
    ml
    dry white wine
  • 125
    ml
    fresh breadcrumbs
  • 125
    ml
    cheese, grated
  • 0
    salt and cayenne pepper to taste
 

Method

 
Place Hake fillets in a shallow, greased oven dish.
Melt margarine and sauté onions and mushrooms until soft.
Add stock and wine, and cook for 15 minutes.
Add breadcrumbs to onion mixture and cook for 5 minutes. Remove from heat.
Add cheese and seasoning, spread mixture over each hake fillet and bake in a preheated 180 °C oven for 15 to 20 minutes or until cooked through (if desired, place under grill instead of baking). Serve with vegetables in season or a salad.
