Ingredients (10)

750.00 g hake
sea salt and freshly ground black pepper
lemon — juice only
1.00 onion — finely chopped
1.00 pepper — green or red, finely chopped
2.00 tomatoes — large, peeled and finely chopped
1.00 ml paprika
Tabasco sauce — a few drops
50.00 g cheddar cheese — grated
breadcrumbs

Method:

Preheat the oven to 200 ºC (400 ºF). Spray an ovenproof dish with non-stick spray.
Arrange the hake in the dish and season with salt and pepper and lemon juice on both sides. Cover with aluminium foil and bake till the fish is done and can be easily flaked with a fork.
Sauté the onion and peppers in a little oil till soft. Add the tomatoes, paprika and Tabasco sauce and simmer till a fairly thick sauce is formed. Spoon over the cooked fish, sprinkle with cheese and breadcrumbs and return to the oven till the cheese has melted and the dish is warmed through.
Serve hot with rice, vegetables or a salad.
Serves 4.
