Ingredients (7)

4.00 hake fillets — frozen
sea salt and freshly ground black pepper
1.00 onion — large, sliced
1.00 orange — sliced
4.00 bay leaves
4.00 bacon — rashers
25.00 ml butter

Method:

Preheat the oven to 190ºC and spray an oven dish with non-stick spray.

Season the fish generously with salt and pepper and place a bay leaf on top of each fillet.
Wrap each fillet in a rasher of bacon.

Arrange half the onions in the bottom of the oven dish.
Place the fish on top and arrange the remaining onion and orange slices on top.
Dot with knobs of butter.
Bake in a preheated oven for about 25 minutes or until the fish is done and flakes easily with a fork.
Serve with mashed potato and a green salad.

Serves 4.
