Hake skewers

    oil
  • 100
    ml
    lemon juice
  • 50
    ml
    melted apricot jam
  • 1
    ml
    ground ginger
  • 1
    small onion, finely chopped
  • 5

    dried dill
  • 750
    g
    frozen hake fillets, skinned and cubed while still slightly frozen
  • salt and black pepper to taste
 

Method

 
Mix all the ingredients except the salt and pepper together and leave for about an hour. Thread fish onto skewers and season to taste with salt and pepper. Grill for 10 to 15 minutes 10 cm above moderate coals, basting continuously with the sauce.
