Hake rolls in mustard sauce

Ingredients (15)

FISH
600.00 g hake — fillets, skinned
salt and freshly ground black pepper
lemon juice
100.00 g breadcrumbs — fresh
10.00 ml onion — finely grated
10.00 ml mixed herbs
2.00 lemons — zest only
15.00 ml fresh parsley — finely chopped
60.00 ml milk
SAUCE
30.00 ml mustard — powder
20.00 ml sugar
20.00 ml cornflour
15.00 ml vinegar — grape
50.00 ml water — boiled
15.00 ml oil

Method:

Preheat the oven to 180 ºC (350 ºF).
Lightly season the fish fillets with salt and pepper and sprinkle with a little lemon juice.
Combine the breadcrumbs with the onion, herbs, lemon rind, parsley and milk and place a spoonful of the mixture on top of each fish fillet.
Roll up the fish fillets and secure with a toothpick.
Place in an oven proof dish.
Blend all the ingredients for the sauce and pour half the mixture over the fish fillets.
Bake for 30 minutes or until the fish is just done. Pour the remaining sauce over the fish after 15 minutes.
