Ingredients (13)

200.00 g noodles — shell, uncooked
600.00 g haddock
500.00 ml milk
1.00 onion — finely chopped
20.00 ml butter
40.00 ml flour — cake
1.00 eggs — beaten
100.00 g cheddar cheese — grated
salt and freshly ground black pepper
1.00 ml cayenne pepper
1.00 lemon — zest and juice
30.00 ml fresh parsley — finely chopped
breadcrumbs — fresh

Method:

Preheat oven to 180 ºC (350 ºF). Boil the shell noodles in salted water until soft. Drain well.
Cook the haddock in the milk until done. Drain, reserving the milk. Flake the fish.
Sauté the onion in the butter until soft. Add the cake flour and stir for another minute. Remove from the heat and slowly add the reserved milk while stirring continuously. Return the mixture to the stove and heat until the sauce comes to the boil and thickens. Stir continuously. Remove from the heat and add the egg, cheese, seasonings and parsley. Mix well. Add the haddock and mix lightly.
Spoon layers of the haddock mixture and shell noodles into a greased ovenproof dish, ending with the haddock mixture. Top with a sprinkling of fresh breadcrumbs and bake for 20 minutes or until the dish is heated through. Serve with a salad. Serves 6.
