  • SALAD DRESSING
  • 50
    ml
    ready-made sour cream and chives low-fat salad dressing
  • 25
    ml
    low-fat mayonnaise
  • 50
    ml
    plain yoghurt
  • salt and freshly ground black pepper
  • 15
    ml
    freshly chopped parsley
  • SALAD
  • 200
    g
    cooked haddock, cooled and coarsely flaked
  • 1
    tomato, sliced
  • 1
    feta cheese wheel, crumbled
  • 1
    small onion, sliced
  • 250
    ml
    English cucumber, diced
  • 2
    gherkins, sliced
  • few lettuce leaves
 

Method

 
Blend all the salad dressing ingredients and chill. Carefully mix all the salad ingredients. Divide between 2-3 plates and serve with the salad dressing and fresh rye bread. Serves 2-3.
