55.00 g butter
250.00 ml rice — cooked
300.00 g haddock
3.00 eggs — hard-boiled, chopped
30.00 ml fresh parsley — chopped
1.00 onion — small, chopped
25.00 ml sultanas
25.00 ml peanuts — chopped, toasted

Method:

Melt the butter in a large shallow pan. Add all the remaining ingredients and stir over a medium heat for about 10 minutes, until steaming hot.
