Haddock chowder

    fish or vegetable stock
  • 300
    ml
    milk
  • 4
    chives, chopped
  • 450
    g
    potatoes, cubed
  • 1
    bay leaf
  • 450
    g
    smoked haddock fillets, skinned and diced
  • 410
    g
    creamstyle sweet corn
  • salt and freshly ground black pepper
 

Method

 
Bring the stock and milk to the boil in a saucepan, along with the chives, potatoes and bay leaf. Reduce the temperature and simmer gently until the potatoes are nearly tender. Add the fish and sweet corn. Season to taste with salt and freshly ground black pepper and simmer gently until the fish is done. Remove the bay leaf and serve the soup with crispy rolls. Serves 4.
