Guava salsa with grilled line fish

    line fish fillets
  • olive oil
  • coriander sprigs
  • SALSA
  • 5
    ripe guavas, peeled, seeded and diced
  • 1
    large ripe tomato, skinned, seeded and diced
  • 2
    spring onions, sliced
  • 25
    ml
    chopped coriander
  • 2
    green chillies, seeded and chopped
  • 125
    ml
    olive oil
  • 30
    ml
    lemon juice
  • salt and milled pepper to taste
  • 5
    ml
    sugar
 

Method

 
SALSA: Mix all ingredients. Grill line fish fillets (each 150-200 g). Spoon salsa over, drizzle with olive oil and top with coriander sprigs.
