200.00 g Marie biscuits
150.00 g butter — or margarine, melted
250.00 ml sugar
2.00 eggs — extra-large, seperated
50.00 ml flour — cake
410.00 g guavas — tinned, purée
250.00 ml milk

Method:

Preheat the oven to 160ºC (325ºF). Spray a 24 cm ovenproof dish with non-stick spray.
Crush the Marie biscuits in a food processor and mix with 100 g butter or margarine. Press the mixture on the bottom and along the sides of the prepared oven dish. Chill until needed.
Cream the remaining butter and sugar and add the egg yolk. Beat well. Sift in the cake flour, add the puréed guavas and mix lightly. Add the milk and mix well.
Whisk the egg whites until soft peaks are formed and fold into the mixture. Pour into the prepared crust and bake for about 30 minutes or until done.
Serve lukewarm with guavas or custard.
Serves 4-6.
