  • 2
    aubergines
  • a few baby marrows
  • 2
    garlic cloves, peeled
  • 2
    sprigs fresh lemon thyme
  • a dash or two of olive oil
  • Parmesan cheese shavings
 

Method

 
Slice the brinjals and baby marrows lengthwise.
Grill over coals or in a well-heated griddle pan until the edges begin to blacken.
Place in a dish.
Slice the garlic cloves thinly and mix with the fresh lemon thyme and olive oil.
Pour over the vegetables and cool to room temperature.
Serve with Parmesan cheese shavings.
