Ingredients (9)

4.00 pepper — red, green, yellow, halved
250.00 g baby tomatoes
410.00 g artichokes — tinned hearts, chopped
250.00 g feta cheese — cubed
8.00 anchovy fillets — optional
12.00 olives — black, optional
30.00 ml fresh chillies — 573
salt and freshly ground black pepper
60.00 ml pesto

Method:

Preheat oven to 180 ºC. Place pepper halves on a baking sheet.
Pile tomatoes, artichokes, feta cheese, anchovy fillets and olives in halves. Drizzle with olive oil and sprinkle salt and pepper over.
Bake for 30 minutes, or until peppers are tender.
Top each pepper half with a dollop of pesto and serve immediately with crusty bread and a salad.
