Grilled stuffed peppers

    red, yellow or orange sweet peppers, halved lengthways and seeded

    baby tomatoes
  • 410

    artichokes, drained and chopped
  • 250

    feta cheese, drained and cubed
  • 8
    anchovy fillets (optional)
  • 12
    black olives (optional)
  • 30
    ml
    olive oil
  • salt and milled black pepper
  • 60
    ml
    pesto
 

Method

 
Preheat oven to 180 ºC. Place pepper halves on a baking sheet. Pile tomatoes, artichokes, feta cheese, anchovy fillets and olives in halves. Drizzle with olive oil and sprinkle salt and pepper over. Bake for 30 minutes, or until peppers are tender. Top each pepper half with a dollop of pesto and serve immediately with crusty bread and a salad.
