Grilled sticky pineapple

    large, very ripe pineapple
  • 50
    g
    butter
  • 100
    ml
    maple syrup
  • 10
    ml
    lemon juice
  • ICE CREAM BALLS
  • 6
    scoops vanilla ice cream
  • 100
    g
    peanut brittle, crushed
 

Method

 
Slice top off pineapple. Halve pineapple lengthways, then cut each half lengthways into 3 wedges, then slice each wedge horizontally 6-8 times, without cutting through the skin. Melt butter, syrup and lemon juice in a frying pan over moderate heat, add pineapple wedges and fry for 10 minutes, turning once and drizzling mixture over and between slices. ICE CREAM BALLS: Roll each ice cream ball in peanut brittle and serve with the hot pineapple.
