1.00 pineapple
50.00 g butter
100.00 ml maple syrup
10.00 ml lemon juice
ICE CREAM BALLS
6.00 ice cream — vanilla
100.00 g brittle — peanut, crushed

Method:

Slice top off pineapple. Halve pineapple lengthways, then cut each half lengthways into 3 wedges, then slice each wedge horizontally 6-8 times, without cutting through the skin.
Melt butter, syrup and lemon juice in a frying pan over moderate heat, add pineapple wedges and fry for 10 minutes, turning once and drizzling mixture over and between slices.
ICE CREAM BALLS: Roll each ice cream ball in peanut brittle and serve with the hot pineapple.
