Grilled polenta with Parma ham and rocket

  • 750
    ml
    water
  • 375
    ml
    polenta
  • 125
    ml
    freshly grated Parmesan cheese
  • salt and milled pepper
  • 65
    ml
    butter
  • olive oil
  • Parma ham, rocket leaves and Parmesan shavings
 

Method

 
Bring water to boil. Stir or whisk in polenta, turn down heat and cook until thickened, a few minutes. Stir in Parmesan, seasoning and butter. Spread out in a 30 cm diameter cake pan (or 2 x 20 cm diameter cake pans), sprayed with non-stick spray, and leave to set. Slice into wedges, as you would a cake. Sprinkle wedges with a little oil and grill 1 side. Turn and grill other side. Arrange polenta wedges, on individual plates. Top with Parma ham, rocket and Parmesan shavings. Season, drizzle with extra olive oil and serve.
