Grilled pineapple with yoghurt

    fresh pineapples, peeled and sliced
  • 15
    ml
    lemon juice
  • 60
    ml
    brown sugar
  • 2
    ml
    ground cinnamon
  • 1
    ml
    freshly grated nutmeg
  • 250
    ml
    natural yoghurt
  • 100
    ml
    mascarpone cheese
  • 20
    ml
    rum
 

Method

Pack pineapple slices on to a greased baking tray. Drizzle with lemon juice. Mix sugar, cinnamon and nutmeg together and sprinkle over pineapples slices. Grill under a medium-hot grill until sugar bubbles. Mix yoghurt, mascarpone and rum together and serve a dollop on the side of the grilled pineapple slices. Serves 4.
