Grilled pepper pesto

  • 3
    large red sweet peppers, grilled and skinned
  • 2
    cloves garlic, peeled
  • 150
    g
    sun-dried tomatoes
  • 250
    ml
    feta cheese, broken into chunks
  • 75
    g
    toasted sunflower seeds
  • 250
    ml
    olive oil
  • salt and milled pepper
 

Method

 
Place all ingredients, except oil and seasoning, in the bowl of a food processor or blender. Blend for 10 seconds, then add oil in a steady stream until mixture is velvety pink. Season to taste and blend again briefly. Store in a clean glass jar. Makes 500 ml.
