Grilled linefish

    kg
    prepared linefish fillets (see tips)
  • 60
    ml
    olive or sunflower oil or butter
  • salt and milled black pepper
  • 1
    lemon, juice
 

Method

 
1. Preheat the grill. 2. Brush the prepared fish fillets lavishly on both sides with oil, butter or a mixture of oil and butter. 3. Sprinkle the fish generously with salt and pepper. 4. Squeeze a little lemon juice over the fillets. 5. Place the fish fillets, skin side down, on a ridged pan or the rack of a roasting pan. 6. Place the pan as close to the grilling element as possible and grill fish for 5 to 8 minutes, or until the top is lightly crusted and golden. 7. Sprinkle a little extra lemon juice over before serving, or serve with lemon butter sauce with parsley (see recipe).
