Grilled garlic chicken

    sour milk

    lemon pepper

    dried chillies or curry powder

    prunes

    fresh parsley or mixed herbs, chopped

    lemon juice
  • RICE

    butter

    large onion, finely sliced
  • 75

    seedless raisins
  • 35

    slivered almonds

    cooked rice
  • GARNISH
  • red pepper, cut into strips
  • pineapple wedges
 

Method

 
1. Preheat oven to 200 ºC. Make small slits on the chicken pieces. 2. In a small bowl, mix the sour milk, oil, garlic and dried spices. Rub the mixture onto the chicken pieces until well coated. Leave to marinate in the refrigerator for approximately 2 hours. 3. Arrange chicken in a flat casserole dish, placing prunes between the pieces. Cover with foil and bake for approximately 40 minutes or until chicken has cooked through. 4. Remove foil, sprinkle with herbs and lemon juice and grill until golden brown. RICE 5. Melt butter in saucepan, add onion, raisins, almonds and fry until onions are a light golden colour. Add the cooked rice and toss well. 6. Serve chicken with the rice and garnish with red pepper and pineapple wedges. Serves 4.
