Grilled fish with spices

    tuna steaks
  • 1
    onion, roughly chopped
  • 1
    fresh red chilli
  • 1
    clove garlic
  • 5
    ml
    salt
  • 375
    ml
    thick coconut milk
  • 1
    stalk lemon grass
  • 30
    ml
    chopped fresh basil
  • sunflower oil
  • lemon juice
  • salt to taste
 

Method

 
Wash tuna and pat dry. Place in a single layer in a glass dish (don't overlap them). Purée onion, chilli, garlic, salt and 125 ml (1/2 cup) coconut milk until smooth. Marinate fish in spice mixture for 1 hour. Remove fish, brush with oil and grill. Meanwhile, bring marinade, remaining coconut milk, lemon grass and chopped basil to boil, then simmer over low heat, stirring frequently (to prevent curdling), until reduced slightly. Taste and add more lemon juice if desired. Spoon over grilled fish and serve.
