Grilled chicken kebabs

    chicken breast fillets
  • 40
    ml
    peppercorn mustard powder
  • 50
    ml
    dry sherry
  • 40
    ml
    honey
  • 20
    ml
    lemon juice
  • 30
    ml
    sunflower oil
  • 36
    cherry tomatoes
  • 8
    patty pans, sliced
 

Method

Flatten chicken breasts slightly using the palm of your hand. Slice each fillet lengthways into 3. Mix remaining ingredients together and pour over the chicken slices. Set aside to marinate for 1 hour. Thread onto skewers alternating with tomatoes and sliced patty pans. Grill for 4-5 minutes, turn over and grill the other side, basting with remaining marinade. Serve hot or cold. Serves: 6 Preparation time: 15 minutes Cooking time: 10 minutes
