Grilled salmon salad with ginger dressing

    ml
    olive oil
  • 200
    g
    salmon
  • 250
    ml
    ripe cherry tomatoes, halved
  • 1
    avocado, chopped
  • 100
    g
    baby spinach leaves
  • DRESSINGS:
  • 3-5
    ml
    finely grated ginger
  • 15
    ml
    lemon juice or white wine vinegar
  • 45
    ml
    olive oil
  • dash of Tabasco sauce or chilli powder
 

Method

Rub the oil over the fish and fry in a hot pan for a few minutes on each side. The centre should still be pink. Once done, set aside to cool, then flake. Toss together with the remaining ingredients.

Mix the ginger and lemon juice together for the dressing, then slowly whisk in the olive oil and Tabasco sauce or chilli. Serve with the salad.
