Grilled asparagus with lemon vinaigrette

    fresh lemon juice

    ml
    olive oil
  • 5
    ml
    castor sugar
  • salt and freshly ground black pepper to taste

    thick asparagus
  • olive oil
 

Method

Prepare lemon vinaigrette
Mix all the ingredients to form a smooth emulsion consistency and set aside.


Arrange the asparagus on a baking tray and brush with olive oil. Grill under a preheated element until just done, with the tips slightly browned.

Drizzle vinaigrette over and serve.

TIP You can also grill the asparagus in a skillet or ribbed frying pan until golden-brown strips form and they’re al dente. Asparagus cooks fast and wilts easily, and it’s easier to control the cooking process in a pan than in the oven.

Serves 4 to 6 portions as a side dish.
