    grape vinegar

    lemon juice

    grated Parmesan cheese

    chopped fresh parsley

    chopped fresh mint
  • 1-2
    anchovies, chopped
  • 1
    garlic clove, crushed
  • 15

    capers
  • 5
    ml
    Dijon mustard

    olive oil
  • 30

    plain yoghurt
  • Salad
  • selection of salad greens including baby spinach and basil
  • a few black olives, pitted and halved
  • 125

    cherry tomatoes, halved
  • 1-2
    rounds feta cheese, broken into small pieces
  • extra Parmesan cheese shavings (optional)
  • grated sesame seeds for sprinkling on top (optional)
 

Method

 
Dressing
Put the dressing ingredients in a blender and blitz until smooth.

Salad
Arrange the salad ingredients in individual bowls and serve with the dressing on the side so guests can help themselves.
