Mediterranean Dressing
30 ml vinegar — grape
15 ml lemon juice
30 ml parmesan cheese — grated
80 ml fresh parsley — chopped
15 ml fresh mint — chopped
1-2 anchovy fillets
1 garlic — cloves, crushed
15 ml capers
5 ml Dijon mustard
180 ml fresh chillies — 573
30 ml yoghurt — plain
Salad
lettuce — salad greens
olives — black, pitted and halved
125 g cherry tomatoes — halved
1-2 feta cheese — chopped
parmesan cheese — shavings
sesame seeds — to serve

Method:

Dressing

Put the dressing ingredients in a blender and blitz until smooth.

Salad

Arrange the salad ingredients in individual bowls and serve with the dressing on the side so guests can help
themselves.
