Green salad with roasted figs and ham

  • SALAD DRESSING
  • 80
    ml
    brown grape vinegar
  • 65
    ml
    light olive oil
  • 30
    ml
    freshly squeezed lemon juice
  • 45
    ml
    honey
  • 1
    orange, grated rind
  • salt and freshly ground black pepper to taste
  • SALAD
  • 12
    firm ripe or preserved figs, halved
  • olive oil
  • 120
    g
    pepper ham
  • 1
    packet mixed salad greens, rinsed and drained if necessary
  • 120
    g
    uncoloured cheese
 

Method

 
Blend all the salad dressing ingredients together using a wire whisk. Refrigerate until needed. Arrange the fig halves on a baking sheet and brush lightly with olive oil. Grill rapidly under a very hot oven grill until the figs just become tender. (Alternatively, roast rapidly over hot coals.) Remove from the oven and allow to cool until lukewarm. Divide the figs, ham and lettuce leaves between 6 large plates. Moisten with the salad dressing. Shave off strips of cheese with a vegetable peeler and scatter over the salad. Serve immediately.
