Ingredients (11)

SALAD DRESSING
80.00 ml vinegar — brown grape
65.00 ml olive oil — light
30.00 ml lemon juice — freshly squeezed
45.00 ml honey
1.00 orange — zest only
salt and freshly ground black pepper — to taste
SALAD
12.00 figs — fresh or preserved, halved
fresh chillies — 573
120.00 g ham — peppered
1.00 salad greens
120.00 g cheese

Method:

Blend all the salad dressing ingredients together using a wire whisk. Refrigerate until needed.
Arrange the fig halves on a baking sheet and brush lightly with olive oil.
Grill rapidly under a very hot oven grill until the figs just become tender. (Alternatively, roast rapidly over hot coals.)
Remove from the oven and allow to cool until lukewarm.
Divide the figs, ham and lettuce leaves between 6 large plates.
Moisten with the salad dressing. Shave off strips of cheese with a vegetable peeler and scatter over the salad.
Serve immediately.
