Green salad with mint vinaigrette

  • 150
    g
    mangetout pods
  • 200
    g
    mixed lettuce leaves
  • 60
    g
    red cabbage, shredded
  • salt and black pepper
  • DRESSING
  • 1
    lemon, juice and finely grated rind
  • 30
    ml
    olive oil
  • 15
    ml
    chopped fresh mint
  • 10
    ml
    runny honey
 

Method

 
Blanch the mangetout pods by plunging them into boiling water for one minute, then rinsing under cold water until completely cold.
Pat dry and cut into long, fairly thick strips.
Tear the lettuce leaves into smaller pieces.
Gently mix the mangetout strips and lettuce with the remaining ingredients.
Dressing:
Whisk together all the ingredients and chill.
Drizzle over the salad just before serving.
