Green salad with herbs and seeds

    g
    mixed lettuce leaves
  • 30
    g
    fresh herbs, such as parsley, spring onions, basil, tarragon and mint
  • a few edible flowers
  • 15
    ml
    sunflower seeds
  • 15
    ml
    pumpkin seeds
  • 10
    ml
    poppy seeds
  • DRESSING
  • 60
    ml
    olive oil
  • 15
    ml
    sherry vinegar
  • 2
    ml
    Dijon mustard
  • 1
    garlic clove, crushed
  • salt and sugar
 

Method

 
Wash the lettuce, herbs and flowers and pat dry.
Keep in the fridge until needed.
Toast the seeds in a heated pan until fragrant and leave to cool.
Blend the dressing ingredients.
Just before serving, combine the lettuce, herbs, flowers and seeds and moisten with the salad dressing.
