Green pepper konfyt

Ingredients

  • 450
    g
    onions, finely chopped
  • 1
    kg
    green peppers, seeded and diced
  • 30
    ml
    olive oil
  • 1
    large clove garlic, crushed
  • 900
    g
    ripe tomatoes, peeled and finely chopped
  • 250
    g
    sultanas
  • 5
    ml
    ground ginger
  • 5
    ml
    mixed spice
  • 550
    ml
    sugar
  • 500
    ml
    red wine vinegar
 

Method

 
Place the onions, green peppers and olive oil in a saucepan, cover and simmer slowly for 15 minutes. Add the remaining ingredients, stir until the sugar has dissolved and simmer for about 30 to 45 minutes or until the mixture is no longer watery. Spoon into sterilised jars. Makes about 1 litre.
