Green peas with cream

    shelled peas
  • 1
    head of lettuce (any kind)
  • 12
    spring onions, halved
  • 30
    g
    butter
  • 75
    ml
    chicken stock
  • salt and pepper
  • pinch of sugar
  • 25
    ml
    freshly chopped fennel
  • 150
    ml
    cream
 

Method

 
Break lettuce open and wash well, remove core. Cut lettuce leaves into strips. Remove green ends of spring onions and halve. Melt butter in a pot and add peas, shredded lettuce and spring onions. Stir until completely coated with butter. Add the boiling stock, salt, pepper, sugar and a little of the fennel. Cover and simmer for 15 to 20 minutes or until peas are tender. Remove lid and boil rapidly until all liquid has evaporated, then stir in the cream. Reheat without boiling and adjust seasoning. Sprinkle with remaining chopped fennel just before serving.
