Green pawpaw salad

    green pawpaw or mango

    small green chillies

    cloves garlic, peeled

    slim green beans
  • 40

    unsalted peanuts

    small dried shrimp (optional)

    ml
    fresh lemon or lime juice (or more to taste)
  • 15
    ml
    brown sugar
  • 15
    ml
    fish sauce
 

Method

 
Peel fruit and slice into long, thin matchsticks. Set aside. Lightly pound chillies, garlic and a little of the shredded fruit in a mortar and pestle. Transfer to a bowl and add remaining ingredients, including fruit. Toss and serve immediately.
