Green pasta with garlic

    green pasta
  • 500
    g
    mushrooms
  • 5
    cloves of garlic
  • 45
    ml
    olive oil
  • salt and freshly ground black pepper
  • 45
    ml
    flour
  • 500
    ml
    stock
  • 250
    ml
    sour cream
  • 250
    ml
    Parmesan cheese
 

Method

 
Heat plenty of salted water with a dash of oil. Bring to the boil and add the pasta, stirring frequently until al dente. Drain pasta and rinse with cold water. Wash mushrooms, and slice finely. Peel and finely chop garlic. Heat oil, and gently fry mushrooms over a low heat. Season with the garlic, salt and pepper. Stir in the flour and continue to fry without allowing the mixture to brown. Add the stock and stir well. Bring to the boil and reduce to a light, creamy consistency. Remove sauce from the heat and stir in sour cream and half the cheese. Add the drained pasta; mix well with the sauce, heat through and arrange on a preheated serving dish. Before serving, sprinkle the rest of the cheese over.
