Green papaya salad

    medium green papaya
  • 4
    garlic cloves
  • 15
    ml
    shallots or spring onions, chopped
  • 3
    red chillies, seeded and sliced
  • 2
    ml
    salt
  • 3
    young green beans, cut into thin rounds
  • 45
    ml
    fish sauce
  • 15
    ml
    brown sugar
  • 2
    limes, the juice
  • 45
    ml
    peanuts, roasted and crushed
  • red chillies, finely sliced
 

Method

 
First peel the papaya and cut it in half lengthways.
Scrape out the seeds with a spoon and grate the flesh.
Grind the garlic, shallots or spring onions, chilli and salt together in a large pestle and mortar.
Add the beans and lightly crush.
Season with fish sauce, sugar and fresh lime juice.
Transfer salad to a serving dish, sprinkle with crushed peanuts and garnish with sliced red chillis.
