Green gazpacho

    slices white bread, crusts removed

    green chillies, seeded

    large English cucumber, chopped
  • 1
    large green pepper, seeded and chopped

    stalks celery, thinly sliced

    lemon juice

    white wine vinegar

    strong chicken stock
  • salt and milled pepper
  • 250
    ml
    sour cream or natural yoghurt (optional)
 

Method

 
Place bread in a small bowl, cover with a little water and leave to soak for a few minutes. Remove bread and squeeze out excess water. Place bread, garlic, chillies and herbs in a blender and purée until smooth. Add two thirds of chopped vegetables, lemon juice, vinegar and sugar and process until smooth. Transfer mixture to a large bowl, add remaining ingredients including remaining vegetables. Adjust seasoning, then stir in sour cream, if using. Chill well before serving. Will keep, refrigerated, for 2 days.
