Ingredients (15)

5.00 bread — white slices, crusts removed
3.00 garlic — cloves
1.00 green chilli — deseeded
65.00 ml fresh parsley — chopped
65.00 ml fresh coriander — chopped
2.00 spring onions — bunch, chopped
1.00 cucumber — English, chopped
1.00 green pepper, seeded and chopped
2.00 celery stalks — thinly sliced
30.00 ml lemon juice
30.00 ml vinegar — white wine
15.00 ml sugar
500.00 ml stock — chicken
salt and freshly ground black pepper
250.00 ml sour cream — or natural yoghurt

Method:

Place bread in a small bowl, cover with a little water and leave to soak for a few minutes. Remove bread and squeeze out excess water.
Place bread, garlic, chillies and herbs in a blender and purée until smooth. Add two thirds of chopped vegetables, lemon juice, vinegar and sugar and process until smooth.
Transfer mixture to a large bowl, add remaining ingredients including remaining vegetables. Adjust seasoning, then stir in sour cream, if using.
Chill well before serving.
Will keep, refrigerated, for 2 days.
