Ingredients (9)

CRUST
200.00 g tennis biscuits
75.00 g butter — or margarine, melted
FILLING
7.00 ml Sheridans gelatine
25.00 ml water — warm
410.00 g evaporated milk
3.00 eggs — seperated
60.00 g sugar
50.00 g pecan nuts — chopped
490.00 g green fig preserve — finely chopped

Method:

Crush the tennis biscuits and add the melted butter or margarine. Mix and press into a pie dish.

Add the gelatine to the warm water and soak briefly. Heat the mixture slowly until the gelatine has dissolved.

Heat the evaporated milk to the point just below boiling point. Beat the egg yolks and the sugar together until light and creamy. Add a little of the hot milk and mix well. Add the egg mixture to the remaining milk and heat slowly until the mixture begins to thicken (do not allow the mixture to come to the boil as it may curdle).

Remove from the heat and stir in the gelatine. Cool slightly and add the chopped nuts and green figs. Stir. Beat the egg whites until stiff and fold into the mixture. Pour into the crust and chill. When slightly set, decorate with the whole nuts and green fig slices.
